DAY SEVEN!


Well, today is the last day! I have had fun trying new approved Keto meals. I like some more than others but I feel like I am now willing to stretch myself to try new things.

Today I made a variation of the Bacon Chicken Patties to oddly enough exclude the bacon. I added diced onions and mushrooms, s & p, garlic powder and some diced celery. I put it all in the food processor as directed through I left it a little chunky. I used a inch ice cream scoop, dropped it in to a couple of tbs of olive oil and cooked til crispy looking. I made 8 patties out that mixture!

I also in a tbs olive oil and a tbs of butter, I sauteed a whole small head of sliced cabbage and sliced red onion seasoned with 1 tbs of Himalayan salt, 1/2 tsp of garlic powder and s&p to taste! The chicken and cabbage will be my dinner for two days this coming week. I may also make some of that yummy cheesy garlic bread!

Additionally...yes there is more...Ice cream! 6 carb Strawberry ice cream! You will the recipe at the bottom. Who  ever says this Keto thing isn't doable doesn't know what they are missing.

So when we started I said, "stay off the scales and measure yourself". I did that and I hope you did too. This is something that you have to comment to and its personal so I won't ask you to share your results unless you want to. If you stuck to this over the last 7 days you will have lost a couple of pounds and likely an inch or two. You must keep going to see more and lasting results. I will continue to post and offer recipes you might like but you have to take the reigns and do this!  As messed up as my week was...I lost 1/2 inch in my tummy (across my bellybutton) and went from 162 to 160. 2 pounds may not seem like allot but in another three weeks that  2 pounds will turn in to close to 10 pounds or more if you are eating the right foods and paying attention!

I hope you have enjoyed this seven day challenge and that you tried a few new things that you like. Till later, I leave you with my 6C Strawberry Ice Cream!

4 Carb Strawberry Ice Cream                                                                                           

Ingredients:

1-pound fresh strawberries (washed, cut in half)

¾ cup of Monk fruit sweetener or Swerve

1/8 tsp salt

¾ tsp Lemon Juice

2 cups Heavy Cream

Instructions:

**Ice Cream Maker

-Rough crush berries in bowl along with sweetener, s & p

(I used a potato masher)

-Place half in a blender and blend till smooth (optional).

-Set in freezer while you prepare your machine.

-Remove mixture from freezer and add in the heavy cream.

Whisk till blended

-Pour in machine and follow directions. I let mine go for

15 – 20 minutes scraping sides half away through.

-When completed put in air tight container and place in freezer

OR eat it right out of the can!

**No-Churn

-Follow steps 1 and 2.

-Pour heavy cream in a bowl and mix with hand blender till

you have stiff peaks

-Fold heavy cream into berry mixture till well blended

-Place in freeze for a couple of hours. It will get very hard

so allow a little thaw time before you plan to serve it.

 

Makes approx. - 4.5 cups

Servings – 8

Carbs - 4

Hi Holly, my first week, I was able to lose 6 lbs. So now into 2nd week. I'm enjoying exploring the recipes.

DAY SIX!


Good morning!

I hope you had a great yesterday! Ours was really busy as I have continued to say! This was probably the most challenging week to try to do something new food wise. I have been running from one place to the next and really having very little time to stop let alone eat. I know... I need to MAKE time to stop and eat. You're right but there are those days...!

Breakfast will consist of bacon and eggs and since a wonderful friend made me a lovely salad with shrimp and all the fixin', I will be eating that for my lunch today! We are visiting friends for fellowship and food/cookout later this evening so I am taking a peice of steak for me to eat.

I hope and pray that your Saturday will be filled with good things. Hang in there, keep up the good work!

HUMP DAY!

Good morning!

Our 7 day challenge is well underway! We have made it half way and it is my hope that you are being faithful to the challenge that you have entered in to. I am trying really hard to eat regularly. Even though I may not have the meal that goes with that day I am sticking to the menu.

I hope you are trying these new recipes! They are really good and ones I have made and tried myself! I have another meal recipes that you can try! I hope you like this one, I do! Have a great morning and afternoon and stick to the plan!

Garlic Shrimp Caesar Salad
Prep Time: 10 mins | Cook Time: 5 mins | Yield: 2 servings
Ingredients:
● 2 Tablespoons of olive oil (30 ml), to cook with
● 1 lb of shrimp (450 g), defrosted if frozen, peeled and devained
● 1 teaspoon of garlic powder (3 g)
● 1/2 teaspoon of onion powder (1 g)
● Leftover Caesar dressing from Day 1 Lunch (L1)
● 1 head of romaine lettuce (200 g), chopped
● 1/2 cucumber (110 g), thinly sliced
● Salt and pepper, to taste
Instructions:
1. Add the olive oil to a large skillet over medium-high heat. Add the shrimp,
garlic powder, and onion powder to the skillet and saute until the shrimp are
cooked through and opaque, about 2 to 5 minutes. Season with salt and
pepper, to taste,
2. In a large bowl, toss the leftover Caesar dressing with the romaine lettuce and
sliced cucumber.
3. Divide the salad between 2 plates. Top each plate with equal amounts of
shrimp and enjoy.

Fat: 43 g
Total Carbs: 6 g
Fiber: 2 g
Sugar: 3 g
Net Carbs: 4 g

Kathy - I'm so glad to know you are here! I will continue to put out more recipes and suggestions. I pray that you are finding this uncomplicated and see the long term benefits as well. Because I have personally seen dramatic changes I am going to continue to move forward well after the seven days. Since March I have lost 19-20 pounds and gone from a 14-16 to a 12. I will be interested to see how this challenge comes out. I was looking to loss not only another couple of pounds but an inch or so too! I hope you will see a change as well...but not yet! Like me, wait til Monday morning for the reveal! Blessings Sister.

This recipe looks amazing, looking forward to making it..
My husband & I made the curry chicken for last night dinner...the only time I've eaten curry chicken was at an Indian restaurant and like u was not a fan, but did try the recipe, went mild on the curry and it was actually good. Im so appreciative to have all these recipes as sometimes I'm bewildered on how & what to make and how to make the healthier version. Thank u for leading us thru this challenge

Hope you had a good day! Dinner is coming up and I am gonna eat my spaghetti and meatballs! I told you I don't like curry so I am deviating tonight. If you don't like somethings on the menu you can do the same but really try to stick with the prescribed food.

What a  day this was! None stop!

We did the video this morning so I kind of desided to forego posting til now but I wanted to give you a new recipe!

Great first day!


Wow! What a first day! I enjoyed al the food items! I hope you tried the bread with your spaghetti and meatballs!

I had late meeting so no "dinner" tonight...ate half an avocado and piece of salami. I'll eat this spaghetti and meatballs on night 3 or 4 because I don't like anything "curry". excited though!

So, I have poison ivy (yes, again) so had to go to the doctor for a shot. I'm telling this because I took the oppertunity to use there scales. Now, I told you the scale is not your friend but...I should get a starting weight and body measurements. 162.4 lbs shooting for 157 these 7 days! No more scales for me till Monday!

You should set a designated eating time. What do I mean? Breakfast by 7am. Lunch by 1pm and Dinner no later that 7pm. Eat your approved snacks and NO late night eating. This is the time that body needs to fast and begin to "eat the fat". This is important. It will also help you sleep better. If you can't wait til morning have SMALL stash of BACON and eat a piece of that to sustain! :)  REMEMBER, you are retraining your body and like a child you must consistant.

Since I mentioned "snacks"... makes 8 servings and YUMMY and only 1 carb! Divide and seperate or you will sit and eat the whole thing!
